I still have some leftover bread from last week’s Meat-Free Meal of the Week, the Breakfast BLT. I’d hate to waste such delicious bread so this week I bring you a classic meat-free meal: grilled cheese and tomato soup. You’ve probably already eaten this combination before and didn’t give much thought to the fact that there isn’t any meat in it. I happen to think that those are the best type of vegetarian meals…the kind where you never notice what your “missing”! I’m sure you already know how to make a grilled cheese sandwich and the soup I get is “homemade” at my grocery store, so there aren’t any revelations there. Mostly I just wanted to give you an easy meat-free meal option for when your veggie friends or family stop by for lunch. This is also a great meal for kids and adults who’ve been outside in the chilly Autumn weather and are looking for comforting way to warm up and fill their bellies.
I made my grilled cheese with two slices of white cheddar that I already had on hand. One of my favorite combinations is classic, white-american cheese grilled between two slices of Food for Life, 7 Sprouted Grains bread. My mom likes chives on her tomato soup and sometimes I’ll top it with garlic croutons. What grilled cheese combination do you like? Do you get fancy with the cheese, maybe add some pear slices, or are you more traditional? I’d love to hear about your favorites!

I know what I’m having for dinner! The only time I get fancy with my grilled cheese is if I add a tomato. Otherwise, it’s straight up cheese and bread.
My mom used to add tomato when my brother and I were little and we always protested…cheese and bread only! 🙂

Grill Cheese is one of my favorite comfort foods and I like to pair it up w/ my hubby’s homemade roasted red pepper soup. In fact we’re having that for dinner later this week!

You are so right about “not noticing what you are missing” and that is exactly why my rss feed reader just got crammed to the hilt with amazing vegan mofo blogs…no room for much else but who cares! I now have people who share recipes for home made amazing cheezy sauces and block cheeze, creamy vegan hollandaise, amazing vegan sweet treats that are cram packed full of salted vegan caramel and dark rich chocolate…missing out is definately a thing of the past when you can just head on over to a wonderful vegan blog and absorb all of those calories in some of that amazing photography. I can even veganise this recipe almost to a tee thanks to vegan swapsies and you know what? Life is GOOD 🙂 Cheers for this wonderful reminder that we don’t always have to have meat and 3 veg to make our plates complete. There is a whole world out there of food that minimises or eliminates the meat quotient and you wouldn’t even miss it 🙂
Oh, some of those recipes you mention sound so good! I’ll be looking for them next time I do my virtual-visit to Serendipity Farm! It really is an interesting phenomenon that can happen when you stop looking at food as groups and just as food. 🙂
I WISH I could just stop looking at food! Steve is quite disconnected from “food” and just sees it as something to eat. I look at food and see a whole lot more! I guess I am not the only one or celebrity Chef’s wouldn’t have the enormous bank balances that they do ;). I have always been very interested in learning how to make as many things as I can from scratch and now, learning how to make vegan food taste amazing. I made a vegan chocolate cake for our last lecture at Polytechnic and our lecturer said “this is vegan?! I have to honestly say that this is the BEST chocolate cake that I have ever eaten” and promptly asked me for the recipe to give to his vegan daughter :). Food is more than just “food”, it’s an experience. As they say…life is too short for bad wine. I would say that life is too short for bad ANYTHING ;). I just made some of that coconut milk cheeze that the vegans are raving about lately and its promising to be a real goody. It melts! I doctored it a bit flavour wise but it’s tasty and melty and I can feel one of those amazing grilled cheeze sandwiches and some home made tomato soup coming on 🙂

Sourdough. No, wait! Bazillion grain. No, wait! Rye. No… I’ve used every kind of cheese, except blue. I love a good strong cheese paired with pear. Grilled cheese & tomato. Roasted red pepper. This is my favorite comfort meal, especially in darksome November. Good post.
